Bang Bang Shrimp-iv

 Ingredients List

  • For the shrimp:
  • 1 lb. shrimp, peeled and de-veined (you can get tail on or off)
  • 1 egg, beaten
  • 1 cup milk
  • 1/2 cup flour
  • 1/2 cup panko (Japanese breadcrumbs)
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. onion powder
  • 1/4 tsp. garlic powder
  • 1/4 tsp. dried basil
  • 8-12 cups vegetable oil
  • Chopped green onions/chives, for garnish

  • For the sauce:
  • 1/2 cup mayonnaise
  • 2-4 Tbsp. sriracha sauce or chili garlic sauce (more or less to taste)
  • 1 tsp. rice vinegar
  • 1 tsp. soy sauce

 Directions

Heat the oil in a deep fryer or a deep pot to 350 degrees. If you use a fryer, use the amount of oil required by your fryer. For stovetop frying, this will be about medium-high heat. Meanwhile, combine sauce ingredients in a small bowl, cover, and refrigerate. In a small bowl, beat egg and milk and set aside. Combine flour, panko, and spices in another bowl.

Toss shrimp into the breading mixture, then into the egg mixture, then in the breading mixture again. Place on a rack and refrigerate for at least 20 minutes. This will help the breading stick to the shrimp when frying. However, we didn't refrigerate ours and we had no problem. Fry shrimp, a few at a time so as not to overcrowd the oil (thus lowering the temperature), 2-3 minutes or until nice and golden brown. Remove from oil and drain on a rack lined with paper towels. When all of the shrimp are done, toss with the sauce until shrimp are covered. Sprinkle with green onions and enjoy!
