Crispy Chocolate Chip Cookies

Ingredients List
- 1/4 cup coconut flour
- 1 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1 large egg
- 1 cup tapioca flour
- 1/2 cup dark chocolate chips (I like Enjoy Life)
- 1/2 cup melted coconut oil or palm shortening
- 3/4 cup coconut palm sugar (I like this brand)
- 1 tablespoon vanilla extract
- 2 tablespoons coconut milk (full fat)
Directions
Preheat the oven to 350 degrees Fahrenheit. In a large bowl, sift the coconut flour, tapioca flour, baking powder, and sea salt.
In a separate bowl, beat the egg well. Add the coconut oil and palm sugar and continue mixing. Add the vanilla extract and the coconut milk and stir until combined. Add the wet ingredients slowly to the dry ingredients, taking care not to over-mix. Add a half cup of chocolate chips (or the whole bag).
Line a baking sheet with parchment paper. Using a melon ball scooper or ice cream scoop, place rounded circles of the cookie dough at 2-3 inch intervals on the parchment paper. Using your fingers, flatten out the balls until the dough resembles thin circles. Bake for 10-15 minutes or until desired crispiness is reached. Enjoy!
