Mediterranean Pasta Salad-II

Ingredients List
- 2 large chicken breasts {seasoned with salt and pepper, and cut into 1 inch pieces}
- 1 lb Hodgson Mill Whole Wheat Angel Hair pasta {cooked according to the package}
- 1/4 cup of olive oil {divided}
- 2 cloved of garlic minced
- 1 red onion diced
- 1 red or orange bell pepper{diced}
- 1 pint of oven dried {or sun dried} tomatoes
- juice from 1/2 lemon
- 1/4 cup of crumbled feta
- basil {optional for garnish}
Directions
Oven dried tomatoes:
toss a pint of cherry tomatoes with 1 tbsp olive oil {you can also sprinkle them with sea salt and fresh basil}
bake @200 for 2 - 8 hours {the longer the better, but this is a personal preference}
While the pasta water boils. heat a skillet or grill pan {with 2 tbsp olive oil} over medium - high
add the garlic {cook for a few minutes}
add the onion and bell pepper
cook until the vegetables begin to soften and brown a bit { 5 - 7 minutes}
add the chicken and cook until the meat is cooked through {about 10 minutes}
Drain your cooked pasta {reserving 1/4 cup of pasta water to loosen the vegetables a bit - if needed}
To the pasta add the chicken, the dried tomatoes, 2 tbsp olive oil and a squeeze of fresh lemon juice
Top with the feta and fresh basil {if using}
