Easy Breakfast Casserole

Ingredients List
- 2-3 potatoes, skinned
- 1 large onion, chopped
- 2 green bell peppers, chopped
- 12 slices bacon, cooked and crumbled
- 1 package frozen cooked breakfast sausages, thawed and chopped
- 1 cup shredded cheddar cheese, divided
- ½ cup shredded mozzarella cheese
- 12 eggs
- ¼ cup grated Romano or parmesan cheese
- Salt and pepper
- Hot sauce (optional)
Directions
1. Spray 9×12 baking dish with cooking spray. Preheat oven to 350 degrees F.
2. Microwave potatoes partially, until somewhat cooked, but still firm. Remove and slice thin. Place the slices on the bottom of the casserole dish.
3. In a large pan, sauté the onion and peppers. Place them on top of the potatoes. Top with the crumbled bacon and thawed sausages. Sprinkle 1/2 cup of the cheddar (reserving the other 1/2 cup), and the mozzarella over the casserole.
4. Crack eggs into a separate bowl. Add grated Romano or parmesan cheese, salt and pepper to taste, and hot sauce if desired. (If you like a kick, add a couple of splashes.) Mix together and slowly pour over the casserole. Bake about 40 to 45 minutes.
5. Sprinkle remaining cheddar over casserole. Put back in the oven and let cook another 5 to 10 minutes, or until a knife inserted in the middle comes out clean.
Serve warm.
