Fresh Apple Cake with Brown Sugar Frosting

  • 2 and 1/2 cups white whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground all spice
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup packed light or dark brown sugar (I used dark brown)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup boiled cider* or apple juice concentrate
  • 1 teaspoon pure vanilla extract
  • 4 cups peeled chopped apples (about 3 large apples; choose a firm, flavorful variety such as Granny Smith, McIntosh, or Cortland)
  • 1 cup walnuts, toasted and roughly chopped
  • Brown Sugar Frosting
  • 5 tablespoons unsalted butter
  • 1/2 cup packed light or dark brown sugar (I used light)
  • 1/4 teaspoon kosher salt
  • 3 tablespoons milk
  • 1 and 1/2 cups powdered (confectioners) sugar, sifted
  • 1/2 teaspoon pure vanilla extract

 Directions

1. Place the rack in the center of your oven. Preheat oven to 325 degrees F. Grease and flour two 9-inch round cake pans or one 9x13-inch sheet pan or line with parchment paper.

2. To make the cake: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and all spice. In the bowl of a standing mixer or a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy, about 3 minutes. Beat in the eggs, one at a time, stopping in between each to scrape down the bowl. Mix in the boiled cider and vanilla. With the mixer on low, slowly add the dry ingredients, stirring just until evenly moistened. Fold in the apples and walnuts.

3. Pour the batter into the prepared pan(s) and spread evenly. Bake until a toothpick inserted into the center comes out clean, 30 to 35 minutes for the 9-inch pans or 45-55 minutes for the sheet cake. (Baking time may vary depending upon the moisture content of the apples.)

3. To make the frosting: In a small pan, melt the butter over medium heat. Stir in the brown sugar and salt and cook, stirring constantly, until the sugar melts. Add the milk, bring mixture to a gentle boil, then pour into a mixing bowl and allow to cool for 10 minutes.

4. After 10 minutes, stir in the powdered sugar and vanilla. Beat well, adding additional powdered sugar as needed if the mixture is too thin.

5. Spread onto the cake while the frosting is still warm, as it will become firm and set as it cools. Slice generously and serve.
