Simple Stuffed Peppers

Ingredients List
- 3/4 lb. ground turkey breast
- 1 1/2 tbsp. cumin
- 1 tsp. kosher salt
- 1 can (28oz.) Classico Crushed Tomatoes
- 1 can (15.25oz.) black beans, rinsed and drained
- 1 can (15.25oz.) sweet corn, drained
- 3 cup Jasmine Rice (cooked)
- 8 fresh Sweet Red peppers
- 1 cup reduced fat Colby Jack cheese
- 2 green onions, sliced
Directions
1. Preheat oven to 350 F. Wash peppers and cut off tops. Remove seed and inner stem. Stand peppers up in a 9×13 inch baking dish.
2. In large skillet brown ground meat completely and then drain. Return skillet (and meat) to heat and add next five ingredients (through the corn) to the skillet. Stir and simmer about 15 minutes. Meanwhile, cook rice if you haven”™t yet.
3. Add cooked rice to skillet and stir until well combined. Remove from heat and then spoon filling into the empty peppers, filling to the top. Cover dish with foil and bake att 350 F for 50-55 minutes. Remove foil and cover peppers with shredded cheese, then bake uncovered for an additional five minutes or until cheese has melted.
4. Remove from oven and sprinkle with sliced green onions. Serve.
