Spicy Sweet Potato, Red Pepper and Carrot Soup

Ingredients List
- 1 large sweet potato, peeled and chopped
- 2 large carrots, chopped
- 1 red pepper, chopped
- 2 cloves of garlic, crushed
- 1 medium onion, finely chopped
- 1 teaspoon of cumin seeds
- 1 teaspoon of coriander
- 1 teaspoon of paprika
- 1 litre of vegetable stock
- Salt and pepper to season
- Frylight or Pam Spray
Directions
Spray a large saucepan with Frylight or Pam spray and fry onion and garlic
Add cumin seeds and cook for a further 1-2 mins, adding more Frylight or Pam spray if needed.
Add roughly chopped red pepper and carrots
Add coriander and paprika and stir to coat
Add Vegetable stock and sweet potato
Bring to the boil and then simmer until all vegetables are softened. Approx 1.5 hours.
Roughly blend the soup, (you don”™t want to over blend, as the soup is delicious with some chunks of vegetables)
Season with salt and pepper to taste
Serve topped with fresh coriander
