3 Tablespoons chia seeds (soaked in 9 Tablespoons water)
1 teaspoon vanilla extract
Put the chia seeds and water in a blender and let soak for 5 minutes. (You could also use chia powder and omit the water, or grind the chia seeds first, then add water. I kinda like the little crunch of the chia seeds so I left out this step)
After the chia seeds have soaked, blend them for about 30 seconds to break up the gel that the chia seeds create.
Next, add the rest of the ingredients and blend until everything is mixed in well. I blended mine for 1-3 minutes, stopping the blender once to scrape the sides.
Then just cook these like you would regular pancakes and ENJOY!
