Quick and Easy Beef and Broccoli Stir-Fry

  • Steak Marinade:
  • 1 Tablespoon soy sauce
  • 1 Tablespoon sherry
  • 3 scallions, whites only, thinly sliced on an angle
  • 1 1/2 pounds sirloin thinly sliced
  • Ginger, Garlic and Scallion Mixture:
  • 2 cloves minced garlic
  • 1-inch piece peeled fresh ginger, minced
  • 1 teaspoon vegetable oil
  • Garlic Sauce:
  • 3 Tablespoons sherry
  • 3 Tablespoons chicken stock
  • 3 Tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 cloves minced garlic
  • 2 Tablespoons sugar
  • 2 Tablespoons vegetable oil
  • 1 1/2 pounds broccoli, trimmed sliced stalks and medium florets (keep the 2 cuts separate)
  • 1 small onion, cut into wedges
  • 3 carrots thinly sliced
  • 1 small onion, cut into wedges
  • 1 large red pepper sliced thinly

 Directions

A quick, tasty and healthy meal that everyone in my house enjoys!

Directions:

1. Mix together the soy sauce with sherry. Marinate the sirloin and scallions in the mixture at room temperature while you prepare the rest of the ingredients.

2. Stir together the garlic, ginger, and vegetable oil in a small bowl and set aside.

3. Whisk together the sherry, chicken broth, soy sauce, sesame oil, garlic, and sugar in a bowl. Set aside.

Make sure you have everything ready to go before you start cooking the stir-fry.

4. Heat a large nonstick skillet over medium-high heat. Add 1 Tablespoon of vegetable oil and heat. Add the broccoli stems, onion and carrots, and stir-fry for 30 seconds. Add the florets and the remaining garlic, ginger, 2 Tablespoons of water, and season with 1/4 teaspoon salt and pepper. Cover the skillet with a lid, and cook for another minute. Take the lid off, add the peppers and cook until the water has evaporated completely and the broccoli is bright green but still crisp. Transfer to a plate and keep warm.

5. Add 2 Tablespoons of the vegetable oil to the empty pan. Place the sirloin and scallions in a single layer in the pan. Brown for one minute. Flip the beef and cook on the other side.

6. Once the beef is nice and crisp, add the cooked vegetables back to the pan. Pour in the garlic sauce. Toss until the sauce begins to thicken.

7. Serve warm over a bed of rice. Enjoy!
