Zucchini Noodle Soup

 Ingredients List

  • INGREDIENTS
  • - veggie bouillon cube
  • - 3 cups of water
  • - 1 stalk of celery, chopped
  • - 1/2 red pepper, diced
  • - 1 zucchini, chop the two ends off and leave whole
  • - pepper and red chili flakes to taste
  • - handful of parsley, as garnish
  • OPTIONAL
  • - cubed little pieces of tofu

 Directions

METHOD
1. Bring water to boil, add bouillon cube.
2. Add celery, red pepper, pepper and red chili flakes. Boil for 2 minutes, or while you spiralize the zucchini.
3. Spiralize the zucchini. Add to water. Boil for 1 minute or less! This is where I would add tofu too!
4. Add to bowl and top with parsley!
An entire zucchini only has 20 calories! As opposed to the noodles I have had an obsession with for 10 years... they have a minimum of 200 calories! So ya, we're looking good.
