  • -equivalent of fresh soaked
  • -beans; rinsed and drained
  • 1 cn (17-oz) whole kernel corn;
  • -drained
  • 3 Tomatoes; coarsely chopped
  • 1 lg Avocado; peeled and
  • -chopped
  • 1 lg Onion; chopped (can use
  • -any type: purple; vidalia,
  • -etc)
  • 1/4 c Chopped fresh cilantro -or-
  • 1 ts Dried parsley
  • 4 tb Lemon juice
  • 2 tb Olive oil
  • 1 tb Red wine vinegar
  • 1 ts Salt
  • 1/2 ts Pepper
