Brownie Batter Skillet Cookie

Ingredients List
- For the cookie:
- 3 Tablespoons unsalted sweet cream butter, melted
- 2 Tablespoons brown sugar
- 11/2 Tablespoons granulated sugar
- 1 egg yolk
- 1/2 teaspoon vanilla extract (I use Nielsen-Massey)
- 51/2 Tablespoons flour
- 1/4 teaspoon baking soda
- 1/4 1 teaspoon corn starch
- 1/8 teaspoon salt
- 1/4 cup chocolate chips or
- For the brownie batter:
- 2 heaping Tablespoons light brown sugar
- 2 Tablespoons all-purpose flour
- 1 Tablespoon cocoa powder (I used Hershey's)
- 1 Tablespoon milk
- 1 egg yolk (or 2 Tablespoons pasteurized egg whites if regular raw eggs make you squeamish)
- 3 teaspoons vegetable oil
- 1/2 teaspoon vanilla extract (I used Nielsen-Massey)
- 1/8 teaspoon salt
- Top with ice cream, whipped cream, and/or a dash of sea salt if desired.
Directions
1. Preheat oven to 350 degrees F and lightly spray a 6-inch cast iron skillet with non-stick baking spray
2. In a small mixing bowl, add flour, baking soda, corn starch, and salt and stir
3. In a separate small bowl, combine melted butter, sugars, egg yolk, and vanilla extract; stir until evenly incorporated
4. Pour wet ingredients into bowl of dry ingredients and stir, scraping down the sides of the bowl as necessary
5. Fold in chocolate chips
6. Spoon cookie dough into greased skillet and spread it as evenly as possible out to the edges
7. [CRUCIAL STEP]: Save about a teaspoon or so of the dough in the mixing bowl and eat it raw OR give it to your significant other to eat straight off the spoon (you'll earn serious brownie points, promise)
Bake for 13-15 minutes, or until the edges of the cookie start to turn golden-brown (the center of the cookie may still be slightly undercooked-- it's better this way! And it will continue to bake through a bit as it cools)
8. While cookie is baking, combine all brownie batter ingredients in a small bowl and stir vigorously until blended and fully saturated
Once baked, remove skillet cookie from the oven and place on a wire rack to cool slightly (3 minutes)
9. Drizzle with as much brownie batter as desired and enjoy as is, or top with ice cream, whipped cream, and/or a pinch of sea salt
10. If you have any leftover brownie batter, try dipping strawberries in it or drizzling it over ice cream, or refrigerating it overnight and slathering pancakes in it for some morning-after noshing.
