Chinese Chicken Pasta

 Ingredients List

  • 1 tb Vegetable oil
  • 1/2 lb Shiitake mushrooms, stems
  • -removed and caps sliced
  • 1 tb Finely chopped fresh ginger
  • 1/2 ts Minced garlic
  • 1 c Chicken broth
  • 2 tb Soy sauce
  • 1 1/2 ts Asian sesame oil
  • 1/4 ts Freshly ground pepper
  • 2 c Diced cooked chicken
  • 1/4 c Sliced green onions
  • 1 bn Spinach (10 oz.), washed and
  • -chopped
  • 1 lb Spaghetti, cooked according
  • -to package directions

 Directions

Heat vegetable oil in large skillet over medium-high heat. Add mushrooms;
cook 5 minutes. Add ginger and garlic; cook 1 minute more. Add chicken
broth, soy sauce, sesame oil and pepper; bring to boil and cook 1 minute.
Add cooked chicken, green onions and spinach. Toss with hot pasta.
