Coconut Hot Chocolate with Almond Whipped Cream

Ingredients List
- For the whipped cream (optional):Ӭ
- 3/4 cup cold heavy (or whipping) creamӬ
- 1/2 cup mascarpone (here's a great recipe for homemade mascarpone)Ӭ
- 1/2 teaspoon almond extractӬ
- 1/2 teaspoon vanilla extract
- For the hot chocolate:Ӭ
- 1 cup whole milkӬ
- 1 (14-ounce) can coconut milk
- 2 tablespoons cocoa powderӬ
- 2 tablespoons maple syrup (or a few drops of liquid stevia)Ӭ
- 3.5 ounces dark chocolate, broken into small piecesӬ
- 1/2 teaspoon vanilla extract
- Topping:Ӭ
- 1/4 cup unsweetened coconut flakes, toasted
Directions
1. Place cream, mascarpone and extracts in a mixing bowl. Whisk until soft peaks form.
2. Whisk milk, coconut milk, cocoa powder, maple syrup and chocolate in a medium saucepan over medium heat. Whisk until smooth and steaming. Remove from heat and whisk in vanilla. Serve hot chocolate with whipped cream on top and sprinkle with coconut flakes.
