Creole Black Beans

 Ingredients List

  • 2 lb Smoked sausage, 1" pieces
  • 3 cn Black beans (15 oz.) drained
  • 1 1/2 c Chopped onions
  • 1 1/2 c Chopped green pepper
  • 1 1/2 c Chopped celery
  • 4 Cloves garlic, chopped
  • 2 ts Leaf thyme
  • 1 1/2 ts Leaf oregano
  • 1 1/2 ts White pepper
  • 1/4 ts Black pepper
  • 1/4 ts Cayenne pepper
  • 1 Chicken bouillon cube
  • 5 Bay leaves
  • 8 oz Tomato sauce
  • 1 c Water

 Directions

Brown sausage in a skillet over medium heat. Drain fat and transfer to
crock-pot. Combine remaining ingredients in crock-pot. Cover and cook on
low 8 hours or high 4 hours. Remove bay leaves. Serve over cooked rice.
