 Ingredients List

  • 1/4 c Olive oil
  • 2 md Onions, sliced
  • 2 Garlic cloves, minced
  • 2 md Zucchini, cut into 1/4"
  • -slices
  • 1 md Yellow squash, cut into
  • -1/4" slices
  • 1 ts Oregano
  • 1 cn RO*TEL Diced Tomatoes and
  • -Green Chilies (10 oz)
  • 1 cn Crushed tomatoes (16 oz)

 Directions

In a large skillet, saute onions and garlic in hot oil until tender.
Add zucchini, eggplant, squash and oregano. Saute util vegetables are
tender. Stir in RO*TEL and crushed tomatoes; simmer 10 minutes.
