Indian Beetroot Salad

 Ingredients List

  • 2 beets, scrubbed and washed
  • 1 spring onion, white & green parts finely chopped
  • 1 small onion, chopped
  • juice of half lemon
  • 1/2 tsp cumin powder
  • 1/2 tsp toasted sesame seeds
  • salt and pepper powder - to taste
  • fresh herbs (coriander leaves)

 Directions

Peel beets and steam or boil in hot water until fork tender (for about 10 minutes). Cool and cut into cubes. In a bowl, mix together - beets, onions, cilantro, salt, cumin powder, salt, pepper powder and lemon juice.

Sprinkle sesame seeds and Serve.
