Olive Garden Copycat Zuppa Toscana Soup

Ingredients List
- 1 pound italian sausage cooked and crumbled
- 1/2 pound bacon, cut into pieces and cooked
- 1 quart + 1 cup water
- 2 cans chicken broth
- 2 large russet potatoes peeled & cubed
- 2 cloves garlic
- 1/2 medium onion, chopped
- 2 c. chopped kale
- 1 c. heavy whipping cream
Directions
1. With your sausage browned and your bacon cooked, you”™ve got most of the hard work out of the way! Simply peel and cube your potatoes. Place water, chicken broth, potatoes, garlic and onion in a pot. Simmer in pot uncovered over medium heat until the potatoes are tender. Add sausage and bacon to pot. Simmer for 10 minutes. Add kale and cream to pot. Heat thoroughly until kale is wilted. Add salt and pepper to taste. This recipe makes about 6-7 cups of soup. Enjoy!
