PALEO CHICKEN ZOODLE SOUP

Ingredients List
- For BROTH
- 1 chicken carcass - meat removed and reserved
- 7 quarts water
- 1 teaspoon sea salt
- ΒΌ teaspoon cracked black pepper
- 3 celery stalks
- For SOUP
- 3 carrots chopped into even sized pieces
- 4 celery stalks sliced
- 3 medium zucchini noodles (use spiralizer or a julienne peeler)
Directions
1. Place chicken carcass in crockpot
2. Add enough water to cover about 7 quarts
3. Add salt and pepper and celery
4. Cook on low overnight or a minimum of 8 hours
5. Strain broth using a colander - discard everything except broth
6. Return broth to crock pot
7. Add carrots and celery
8. Cook on low for 5 hours
9. Add reserved chicken
10. Add zoodles just before serving for al dente texture
(alternatively you can add the zoodles and cook 5-10 minutes for a softer pasta texture)
11. Serve and Enjoy
