PUMPKIN COOKIES WITH CARAMEL FROSTING Yummy

Ingredients List
- 1 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 Tablespoon ground cinnamon
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- CARAMEL FROSTING
- 3 Tablespoons butter
- 1/4 cup heavy cream
- 1/2 cup brown sugar
- 1 teaspoon vanilla
- 1 cup powdered sugar
Directions
1. Preheat oven to 350° F. Grease 2 large cookie sheets with non-stick spray.
2. In a large bowl, cream butter and both sugars together until fluffy and combined. Slowly add the vanilla and egg. Beat until combined.
3. Beat in pumpkin, flour, baking soda, cinnamon, pumpkin pie spice and salt. Beat until mixture is combined.
4. Drop by Tablespoons onto the prepared cookie sheets. Bake for 10 to 12 minutes. Remove from oven and let cool completely before frosting.
FOR CARAMEL FROSTING
5. Heat butter, heavy cream and brown sugar in a small saucepan over medium heat. Stir until mixture comes to a rolling boil. Remove from heat and let cool. Once mixture has cooled, stir in vanilla and powdered sugar. Frost each cookie with frosting. Serve and enjoy!
