Southwestern Quinoa Salad

 Ingredients List

  • 8 oz. whole wheat pasta
  • 1/2 TBSP. olive oil
  • 1 c. cooked quinoa
  • 1 1/2 c. black beans
  • 1 tomato, diced
  • 1 c. corn
  • 1 green pepper, diced
  • 1 jalapeno, seeded and diced
  • 1 red onion, diced
  • 1 avocado
  • Dressing:
  • 1/4 c. lime juice
  • 3 TBSP. olive oil
  • 1-2 chipotle peppers in adobo, diced
  • 3 garlic cloves, diced
  • 1/2 c. cilantro, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

 Directions

Dressing: Mix lime juice, olive oil, diced chipotle peppers, garlic, cilantro, salt and pepper. Set-aside.

Cook the pasta and quinoa according to directions. Drain pasta and toss with 1/2 tbsp. olive oil. Combine with black beans, corn, tomatoes, onion, green peppers and jalapenos. Toss with dressing and top with diced avocado.
