Stir-Fried Veggie Pita

 Ingredients List

  • 1 tb Olive oil
  • 1 Zucchini -- julilenned
  • 1 sm Eggplant -- julienned
  • 1 md Red onion -- julienned
  • 1/2 ts Cumin
  • Black pepper
  • 1 c Non-fat mozzarella --
  • Shredded


Stir-fry veggies in oil until tender-crisp. Add cumin and pepper. Stuff
into pitas. Add some cheese.
