Strawberry Vanilla Banana Bread

Ingredients List
- 2 1/2 cups all purpose flour
- 3/4 cup sugar
- 3/4 tsp baking soda
- 1/2 tsp salt
- 3 very ripe bananas, mashed well
- 4 TBSPs butter, melted and cooled
- 2 eggs, beaten
- 5.3 oz strawberry banana Greek yogurt (you can also use vanilla)
- 2 tsp vanilla extract
- 1 cup diced strawberries
Directions
1. Preheat your oven to 350 degrees and spray a 9 by 5 inch bread pan with cooking spray.
2. In a medium bowl, whisk together the flour, sugar, baking soda, and salt.
3. In a large bowl whisk together the mashed bananas, melted butter, eggs, yogurt, and vanilla.
4. Gently add the flour mixture to the egg mixture, folding them together until just combined.
5. Gently stir in the strawberries. The batter will be very thick.
6. Pour the batter into the bread pan and bake for 60 to 65 minutes (mine took 63 minutes) or until a toothpick inserted in the middle of the bread comes out clean or with a few crumbs.
