Cream Cheese Enchiladas

Ingredients List
- 6 (6 inch) flour tortillas *I used homemade
- 1 (8 ounce) package cream cheese, softened
- 1 3/4 cup shredded sharp cheddar cheese, divided
- 2 green onions, sliced
- 1/2 recipe homemade enchilada sauce
- 1/3 cup picante sauce *such as Pace's
Directions
Using a hand mixer, combine the softened cream cheese, 1 cup of the shredded cheese, and the green onions. Divide the cream cheese mixture evenly between the tortillas, spread it down their centers and then roll them up. Place enchiladas side by side in a greased 8x8 pan.
Stir the picante sauce into the homemade enchilada sauce. Pour this mixture over the enchiladas in the pan. Sprinkle remaining cheese over the top. Bake at 375 degrees for 20 minutes or until cheese is melted and edges are bubbly.
