- Serves: Makes about 20 bite size pancakes
Ingredients List
- 1/2 cup all-purpose flour
- 1 tablespoon of sugar
- 1 teaspoon of baking powder
- 1/4 teaspoon of baking soda
- 1/4 teaspoon of kosher salt
- 1/2 cup of fat-free plain greek yogurt
- 1-2 tablespoons of milk, depending on the thickness of the yogurt you use
- 2 tablespoons of melted and cooled butter
- 1 egg, lightly beaten
Directions
Combine flour, sugar, baking powder, baking soda, and salt in a large bowl and whisk to combine. Add greek yogurt, butter, and lightly beaten egg to the same bowl. Add enough milk to make batter stir-able, 1-2 tablespoons depending on the thickness of the yogurt.
Pancake pops are perfect for a brunch, a shower, or just a fun breakfast for your family. They are really sturdy, so you can even display them standing up, using a piece of craft foam as a base. Kids of all ages will love them!
