(15 Minute) Spicy Black Bean Burgers with Blue Cream Cheese Coleslaw

 Ingredients List

  • 4 whole wheat burger buns
  • 4 MorningStar Farms Spicy Black Bean Burgers
  • 2 cups pre-made coleslaw mix
  • 4 Tbsp blue cheese crumbles
  • 2 Tbsp plain greek yogurt
  • 1 oz reduced fat cream cheese
  • 1 Tbsp honey
  • Pinch sea salt & pepper
  • 1 small avocado, sliced thin

 Directions

1. For the coleslaw, mix coleslaw, blue cheese, yogurt, cream cheese and honey in a small bowl. Mix well and season with salt and pepper. Set aside or refrigerate if making ahead of time.

2. Cook black bean burgers according to package instructions (Grilling is my favorite!).

3. Meanwhile, toast burger buns.

4. Once burgers are cooked, layer on burger bun bottom, top with coleslaw and avocado.
