3 -Ingredient Banana Pancakes

 Ingredients List

  • 2 eggs
  • 1 ripe banana
  • a splash, about 1/2 tsp. pure vanilla extract
  • pinch of sea salt, optional


1. Put everything in your blender and pulse until it makes a batter. Do not blend. Spray a large nonstick skillet with nonstick spray and heat over medium heat. Pour out small, 3 inch pancakes and cook until the tops bubble and they are firm, about 2-3 minutes. Cook the other side for 2 minutes or until lightly browned. Dig in!
