AdvoCare "Fried" Rice

 Ingredients List

  • 1 bag 90 minute brown rice (pre-make the rice and leave in the fridge to dry out. Day old rice is GREAT!)
  • 1 cup (roughly) chopped veggies of your choice (peas, carrots, water chestnuts, green onion, etc.)
  • 1-2 boneless, skinless chicken breasts (depending on size) cut in very small pieces
  • 3-4 cloves garlic finely chopped
  • Braggs soy protein to taste (found in health food stores)
  • Olive Oil (2-4 teaspoons)
  • 2 beaten eggs
  • Sesame seeds (sprinkle)

 Directions

In a large skillet use cooking spray to soften the onions and garlic. Move to the side and add eggs. Scramble until cooked, chop up in tiny pieces. Add veggies and sauté until warm/desired texture. Remove and set aside.

Heat oil in the skillet and sauté chicken pieces until cooked through.

Add rice and veggie mixture and sauté until hot. Sprinkle with sesame seeds (optional). Finish off with a little Braggs soy protein to taste.
