Andouille Smoked Sausage Skillet

Ingredients List
- 1 tablespoon vegetable oil
- 1 package, 10 oz, smoked sausage
- 1/2 cup white onion, sliced
- 1 jalapeno pepper, deeds removed and diced
- 1 tablespoon minced garlic
- 1 cup frozen corn
- 1 cup red pepper, chopped
- 1 cup grape tomatoes, halved
- 1 cup frozen cut okra
- 2 tablespoons red wine vinegar
- salt and pepper
- chopped fresh parsley
Directions
Add oil, sausage, onion and jalapeno pepper to a large skillet and heat on medium heat for 5-7 minutes or until sausage is browned and onions are tender.
Add garlic, corn, red peppers, tomatoes and okra. Stir in vinegar and season well with salt and pepper.
Continue to heat on medium heat, stirring frequently about 7-10 minutes until heated through.
Top with fresh chopped parsley before serving.
