Apple Cider Cupcakes with Nutmeg Frosting

 Ingredients List

  • 1/2 cup unsalted butter, softened
  • 2/3 cup sugar
  • 2 eggs, room temperature
  • 1 1/2 cups all purpose flour
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 3/4 cup fresh, unpasteurized apple cider
  • for frosting ~
  • 2 sticks ( 1 cup) salted butter, softened (you can use unsalted if that”™s what you have ”“ just add a tiny pinch of salt to the frosting while you beat)
  • 4 cups powdered sugar
  • 1/4 tsp fresh ground nutmeg
  • 1 tsp vanilla extract

 Directions

1. Preheat the oven to 350 degrees. Spray a cupcake pan with nonstick spray or use paper liners. Set aside.

2. Cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, and beat well after each addition. Add the vanilla and mix again.

3. In another bowl, sift together the flour, spices, salt and baking powder. Add to the butter mixture then drizzle in the cider slowly with the mixer running on low. Mix until just combined.

4. Fill cupcake molds 3/4th of the way full with the batter. Bake for 20-23 minutes until golden. Let cool completely while you make the frosting.

5. To make the frosting, beat the softened butter with the powdered sugar, vanilla and nutmeg for about 10 minutes ”” until very fluffy. Pipe or spread the frosting on the cooled cupcakes. Sprinkle with cinnamon if you desire!
