Apple Cinnamon Pound Cake

Ingredients List
- ⅔ cup sugar
- ½ cup butter, softened
- 2 eggs
- 1½ cups flour
- 1½ teaspoons baking powder
- ¾ teaspoon salt
- ½ cup milk
- ½ cup brown sugar
- 1½ teaspoons cinnamon
- 2 granny smith apples, peeled and chopped
Directions
Preheat the oven to 350. Line a loaf pan with foil or parchment, and spray with cooking spray.
In a medium bowl or the bowl of a stand mixer, beat together the butter and sugar until light and fluffy. Add the eggs and mix until combined.
In a small bowl, whisk together the flour, baking powder, and salt. With the mixer on low speed, add half of the flour mixture to the butter mixture, followed by half of the milk. Add the remaining flour, followed by the milk, and mix until combined.
In a small bowl, toss together the brown sugar, cinnamon, and apple pieces. Spread half of the batter in the prepared pan, then spread half of the apples over the top. Spread the remaining batter over the top of the apples, then spread the remaining apples on top.
Bake 55-60 minutes, or until a toothpick inserted in the center of the loaf comes out clean. Let cool 10 minutes before transferring to a cooling rack. Allow to cool completely before slicing and serving.
