Asian Chicken Noodle Soup

Ingredients List
- 3 cup chicken stock
- 1 oz ginger root
- 1 1â„2 tbsp soy sauce
- 1 1â„2 tsp brown sugar
- 1â„8 tsp red pepper flakes
- 1â„2 lime
- 6 oz boneless, skinless chicken breast
- 1 1â„2 tbsp corn starch
- 1 oz shiitake mushrooms
- 1â„2 cup snow peas
- 1â„2 red bell pepper
- 2 sprig cilantro
- 2 oz thin rice noodles
Directions
Add the broth, ginger, soy sauce, brown sugar, red pepper flakes and lime juice to a soup pot. Bring to a boil and boil for five minutes.
Toss chicken with corn starch and shake off the excess. Add chicken and mushrooms to soup. Reduce heat and simmer for 15 minutes.
Stir in snow peas, red pepper, lime zest, cilantro and rice noodles. Let sit for 5 minutes or until noodles are soft. Serve immediately
