Autumn Days Pilaf

 Ingredients List

  • 1 tb Vegetable oil
  • 1/3 c Chopped onions
  • 1 c Uncooked brown rice
  • 3 c Chicken stock
  • 1/4 ts Ground cumin
  • 1 tb Tomato paste
  • 1/4 c Dried lentils
  • 1 c Chicken; cooked and chopped
  • 1/2 c Shredded carrots
  • 1/2 c Unsalted sunflower seeds
  • 1/2 c Raisins


Heat oil in skillet until hot. Saute onions until tender. Add rice and stir
until lightly browned. Add chicken stock and next 3 ingredients; stir well.
Cover, bring to a boil, reduce heat, simmer 30 minutes. Stir in chicken,
carrots, sunflower seeds, and raisins. Cover and cook 10-15 minutes or
until all liquid is absorbed. Serves 6.
