Avocado Toast with Egg.

 Ingredients List

  • 1 ripe avocado
  • 1 teaspoon lemon juice
  • sea salt
  • pepper
  • 2 eggs, cooked sunnyside up
  • 2 pieces of multigrain bread, toasted
  • black beans (optional)
  • sliced tomato (optional)
  • shredded cheddar cheese (optional)


Toast your slices of bread.

Cut the avocado in half lengthwise, twist to separate, and remove & discard the pit. Scoop out the avocado flesh. Add it to a small bowl, and mash with a fork. Stir in the lemon juice.

Cook your eggs.

Spread the avocado on your toast. Top each piece of toast with an egg, and sprinkle with sea salt, fresh ground pepper and any additional toppings.
