Bacon Cheddar Chive Mashed Potatoes!

 Ingredients List

  • 3 medium red potatoes peeled and diced
  • 4 cups chicken broth (or water)
  • 2 tbsp. crisp crumbled bacon
  • 2 tbsp. chopped fresh chives
  • ½ cup cream
  • 1 tbsp. butter
  • Salt and pepper to taste
  • ½ cup shredded cheddar cheese

 Directions

Place potatoes and broth in a large saucepan. Bring to a boil, reduce heat and simmer ten minutes or until potatoes are fork tender. Add all ingredients except for cheddar cheese, mash with a potato masher until smooth.

Bacon Cheddar Chive Mashed Potatoes

Whip with a wooden spoon until creamy.

Add cheese and whip until it is melted and blended into potatoes.

Serve Hot. Tonight served with BBQ Pork Tenderloin Medallions and Super Simple Slaw.
