Bacon-Gruyere Grits Casserole

 Ingredients List

  • 4 1/2 cups water
  • 1 1/4 tsp kosher salt
  • 1 cup quick cooking grits
  • 1 cup freshly grated gruyere cheese
  • 2 Tbsp butter
  • 1 Tbsp hot sauce
  • 1 1/2 tsp spicy mustard
  • 2 lightly beaten eggs
  • toppings
  • cooked bacon * toasted pecans * scallions * fresh parsley
  • freshly ground pepper


bring the water & salt to a rolling boil in a 3 qt saucepan over high heat
whisk in the grits & reduce the heat to medium low
whisk the mixture on occasion to keep the mixture nice & smooth

as the grits begin to thicken
they will bubble & hiss”¦ a slow hiss
as the steam escapes

adjust the stove knob up or down as necessary to keep spattering under control
”¦scalding grits will leave a mark

cook the grits until thickened & tender
about 15 minutes
turn off the heat

preheat the oven to 350 degrees

whisk in the butter & cheese
stir the grits until the cheese melts

whisk in the hot sauce & the mustard
let stand 5 minutes & whisk in the eggs

pour the grits into a lightly greased 2 qt casserole dish
bake for 25 to 30 minutes or until heated through & a touch puffy
sprinkle generously w/ toppings
