Baked Banana Donuts with a Maple Glaze

Ingredients List
- Donuts:
- 1 cup Gold Medal® Better for Bread™ flour
- ½ cup granulated sugar
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- 1 large egg
- ¼ cup canola oil
- ¼ cup buttermilk or whole milk
- ½ teaspoon vanilla
- 2 large bananas, mashed
- Glaze:
- 1 tablespoon butter, melted
- ⅓ cup maple syrup
- ½ cup powdered sugar
- ¼ teaspoon cinnamon
- ¼ teaspoon vanilla
- Chocolate Drizzle:
- ½ cup chocolate chips
- 2 tablespoons butter
Directions
Preheat oven to 425°F. Spray a donut pan with non-stick cooking spray and set aside.
In a large bowl, whisk together the flour, sugar, baking soda, cinnamon and salt. In a separate bowl, whisk together the egg, oil, buttermilk and vanilla. Stir the wet ingredients into the dry ingredients until just combined. Fold in the mashed bananas.
Place batter in a large resealable plastic bag and snip off one of the corners. Pipe batter into greased donut pan, filling each ring about ⅔ full. If you have two pans, you could go ahead and use all of the batter at once. If not, you will need to bake the donuts in two batches.
Bake for 7-9 minutes or until donuts are set and spring back up when touched. Let cool in pan 5 minutes before removing to a wire rack.
While donuts are cooling, prepare the glaze. In a medium microwavable bowl, melt the butter then whisk in the remaining ingredients until thick and smooth. Add additional powdered sugar to thicken it or a little milk to thin it out.
For the chocolate drizzle, melt the chocolate chips and butter in a small microwave-safe bowl until almost melted, about 1 minute. Remove from microwave and stir until completely melted.
Let chocolate set while you dip the tops of each donut in the maple glaze. I dip mine a few times to get a thick glaze over the top and sides of each donut. Place glaze-side up on a wire rack or baking sheet to let glaze set.
Spoon chocolate mixture into a small resealable plastic bag and snip one of the corners. Drizzle chocolate over the top of each glazed donut.
For a fun variation, dip half of the donuts in the melted chocolate glaze and immediately garnish with fun toppings such as sprinkles or nuts.
