Baked Coconut Beignets

Ingredients List
- 60ml warm water
- 1 packet active dry yeast
- 400g plain flour
- 1 1/2tsp baking powder
- 1/2tsp bicarbonate of soda
- 60g caster sugar
- 75g desiccated coconut
- 75g butter (cut into small chunks)
- 1 egg
- 180ml buttermilk
Directions
1. Combine the yeast, warm water and a pinch of the sugar in a jug and set aside until foamy.
2. Combine the flour, baking powder, bicarbonate of soda, coconut and sugar in a large bowl. Using your fingers work in the butter until the mixture looks like bread crumbs.
3. Mix together the egg and the buttermilk and add in the yeast mixture. Stir together with the flour mixture to form a soft dough and then continue to knead (until dough becomes smooth and elastic. If doing this by hand make sure it's on a lightly floured surface.
4. Lightly oil a large bowl and place you ball of dough in it. Cover with clingfilm and let rest for 15 minutes in a warm place.
5. Roll out dough into a large rectangle or square on a floured surface until about 1 inch thick. Ct into 14-16 squares.
6. Place the squares on a lined baking sheet and cover with cling film.
7. Let rise for 45 minutes in a warm place.
8. Preheat oven to 190C degrees.
9. Bake the beignets for 10-12 minutes or until lightly golden.
