Baked Pineapple

Ingredients List
- 1 cup granulated sugar
- 1 teaspoon vanilla extract (optional)
- 1 (20 oz.) can crushed pineapple
- 1/2 teaspoon salt
- 1 (20 oz.) loaf white bread, cut into 1-inch cubes (the less fresh, the easier to cut)
- 1 cup (2 sticks) unsalted butter, melted
Directions
1. Preheat oven to 375 degrees F. Lightly grease a 9x13 or 3 quart baking dish.
2. In a very large mixing bowl, whisk together the eggs and sugar until light. Mix in the vanilla (optional). Stir in the crushed pineapple and salt. Gently fold in the bread cubes. Pour melted butter into the bowl and mix until coated. Transfer to the prepared pan. Bake for 45 minutes, until browned.
