baked southwest egg rolls

Ingredients List
- 2 cups frozen corn, thawed
- 1 (15 oz.) can black beans, rinsed and drained
- 1 cup fresh spinach, sliced
- 2 cups shredded Mexican cheese blend
- 1 (4 oz.) can diced green chiles, drained
- 4 green onions, chopped
- 1 tsp. ground cumin
- ½ tsp. chili powder
- 1 tsp. salt
- ½ tsp. pepper
- ¼ tsp. cayenne pepper
- 1 package egg roll wrappers (about 20-22)
Directions
combine all ingredients {except for the wrappers} in a large bowl. place a small amount of the filling {about 3 tablespoons} in the center of a wrapper with a point facing you. roll one side, and with your finger, brush the other 3 corners with a small amount of water or egg white. then fold in the sides and finish wrapping the rest. place all egg rolls on a cookie sheet sprayed with cooking spray, with only a little space between. spray the tops with cooking spray and bake for about 15 minutes, or until the tops are slightly brown.
