Banana Molasses Muffins r1

  • 3 super ripe bananas
  • 2 Tablespoons — 1/4 cup honey (see note)
  • 1 tablespoon blackstrap molasses
  • 1/4 cup butter or Earth Balance/Becel, melted
  • 1 egg
  • 1 teaspoon almond extract (or vanilla extract if you're a heathen who doesn't like almond extract)
  • 1 1/2 cup plain flour
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

 Directions


1. Preheat oven to 375°F (180°C), and line ten holes of a muffin tray with muffin cases (or good old-fashioned butter).
2. Mash your bananas in a large bowl (get them fairly smooth, but it's fine to leave a few lumps), then stir in the honey, molasses, melted butter/Earth Balance, egg, and almond extract.
3. In a separate bowl, stir together flour, spices, baking soda, and salt. Stir into wet ingredients, trying not to overmix (again, a few lumps are a-okay).
4. Divide batter amongst prepared muffin cases and baked for 18-20 minutes, until golden and springy to the touch. Cool for five minutes in the tin, then move to a wire rack to cool. (But definitely eat one straight away, in the manner described above.)
