Ingredients List
- 1 cup sugar
- 1/2 cup soft butter (or melted)
- 3 ripe bananas
- 2 eggs
- 1 1/4 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2-1 cup pecans or walnuts, chopped (optional)
Directions
Preheat oven to 350 degrees and grease loaf pan.
Using beater, cream together sugar and butter until fluffy. Then add eggs and beat together. Next add all the dry ingredients. Then add the ripe bananas and beat together (not too much, I usually leave the bananas a little chunky). Stir in the chopped nuts.
Pour the batter into a butter coated loaf pan and bake on 350° for 45-60 minutes. I”™ve found that it browns faster than the inside cooks so I”™ll usually bake for 45 minutes until it”™s a nice brown color, check it with a knife and if it”™s still doughy then I cover with aluminum foil and bake for another 5-10 minutes until the inside is cooked through. Enjoy!
