Beef, Hominy and Bean Soup

 Ingredients List

  • 1/2 lb Ground round; crumbled
  • 2 Cloves garlic
  • 1 md Onion; finely chopped
  • 2 tb Fresh parsley; finely
  • -chopped
  • 1 tb Cilantro; finely chopped
  • 1/2 ts Dried whole thyme
  • 4 c Beef broth
  • 16 oz Canned pinto beans; rinsed
  • -and drained
  • 16 oz Canned hominy; rinsed and
  • -drained
  • Salt and pepper; to taste

 Directions

FOR GARNISH
Onions; sliced thin
Jalapenos; sliced thin
Fresh cilantro; finely
-chopped

Brown ground round in lightly greased skillet. Add garlic and onion and
cook until onion is lightly browned. Add parsley, cilantro, and thyme and
mix.

Transfer beef mixture to a soup pot. Add beef broth, pinto beans, hominy
and salt and pepper. Bring mixture to a boil; reduce heat and simmer for
30 minutes.

Serve with garnishes.
