Beef Salad Recipe

  • Beef:
  • 2 pounds cooked beef or oxtail
  • Vinaigrette:
  • 2 tablespoons finely chopped shallot
  • 1 tablespoons Dijon mustard
  • 1 tablespoons red wine vinegar
  • 1 teaspoon dried Mexican oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons extra-virgin olive oil
  • Assembly:
  • 1 large tomatoes, cut into wedges
  • 1/2 cup thinly sliced red onion
  • 2 hearts of romaine lettuce, cored, leaves quartered crosswise
  • toasted bread slices, for serving


1. Pick the meat from the bones and then shred it with your fingers or coarsely chop it.

2. Prepare the vinaigrette. In a bowl, whisk together the shallot, mustard, vinegar, oregano, salt, and pepper. Slowly whisk in the oil in a steady stream until incorporated.

3. Combine tomato slices, red onion, and lettuce in medium bowl. Add the beef. Pour in the vigaigrette and toss to coat. Season to taste with salt and pepper, if needed.

3. Divide salad among plates. Serve with toasted slices of crusty bread.
