Beef Stroganoff-enjoy!!

 Ingredients List

  • 1 pound of top sirloin or tenderloin
  • 1/2 pound mushrooms, sliced
  • 5 tablespoons butter
  • 1/3 cup chopped shallots
  • Salt and pepper to taste
  • 2/3 cup of sour cream
  • 1/4 teaspoon nutmeg
  • 1 teaspoon of dry tarragon


Cut the beef into 1-inch wide by 2 1/2-inch long strips
In a large skillet melt 3 tablespoons butter over medium heat
Increase the heat to high heat and add the beef
Cook the beef quickly browning each side
Sprinkle some salt and pepper
After the both sides are browned remove the beef and set aside
Reduce the heat to medium and still in the same pan add the shallots

Cook the shallots for 2 minutes, then remove and set aside in the same dish with the beef
In the same pan melt another 2 tablespoons of butter
Increase the heat to high temperature.
Add the mushrooms the tarragon and the nutmeg and cook for 4 minutes stirring occasionally.
Then reduce the heat to low temperature and add the sour cream to the mushrooms
Mix in the sour cream and don”™t let it to a simmer
Add the beef, shallots until heated

Sprinkle salt and pepper to taste
