Black Bean and Rice Casserole

  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (10-oz) can diced tomatoes and green chiles, drained
  • 1 (8-oz) can tomato sauce
  • 1 (8-oz) jar salsa/picante sauce
  • 2 cups cooked rice
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese


Preheat oven to 350ยบ F. Lightly spray a 9x13-inch pan with cooking spray.
In a large bowl, combine all ingredients. Transfer to prepared pan.
Bake, uncovered, for 20 to 30 minutes, until cheese is melted.
