Black Bean and Rice Salad

 Ingredients List

  • 2 c Cooked or canned black beans
  • -- (rinse & drained canned)
  • 2 c Cooked rice
  • 1 1/2 c Fresh cilantro
  • 1/4 c Lime juice
  • 3/4 c Oil
  • 1/2 c Chopped onion
  • 2 Garlic cloves; crushed
  • Salt
  • Freshly ground black pepper


Mix the beans, rice, and cilantro together in a bowl. Place the lime juice
in a small bowl and whisk in the oil. Add the onion and garlic and toss
with the rice and beans. Add salt and pepper to taste.
