Black Bean-Mango Salsa

 Ingredients List

  • 1 c Black beans, cooked
  • 2 Whole mangos, chopped
  • 1/2 Red bell pepper diced
  • 1/2 Green bell pepper, diced
  • 1/2 Red onion, diced
  • 3/4 c Pineapple juice
  • 1/2 c Fresh lime juice
  • 1/2 c Cilantro, chopped
  • 2 tb Ons, ground cumin
  • 1 sm Jalapeno, or chile of choice
  • Salt and pepper to taste

 Directions

Throw the whole mess together, let flavors combine for at least and hour.
If mangos aren't too ripe, this can last for up to 4 days covered in the
fridge.
