Ingredients List
- 1 c Black beans, cooked
- 2 Whole mangos, chopped
- 1/2 Red bell pepper diced
- 1/2 Green bell pepper, diced
- 1/2 Red onion, diced
- 3/4 c Pineapple juice
- 1/2 c Fresh lime juice
- 1/2 c Cilantro, chopped
- 2 tb Ons, ground cumin
- 1 sm Jalapeno, or chile of choice
- Salt and pepper to taste
Directions
Throw the whole mess together, let flavors combine for at least and hour.
If mangos aren't too ripe, this can last for up to 4 days covered in the
fridge.
