Blackberry Vanilla Cupcakes

 Ingredients List

  • 225 g sugar
  • 100 g butter, softened
  • 2 large eggs
  • 300 g all purpose flour
  • 1 1/2 tsp baking soda
  • 3 1/2 dl (350 ml) blackberries
  • 2 tbsp milk
  • 1/2 vanilla bean

 Directions

1. Preheat oven to 175 C (350 F). Whip butter and sugar until white and fluffy. Add eggs and beat another 2-3 minutes. Mix flour and baking soda in another bowl. Set aside. Mash blackberries and add them and flour in additions to the butter mixture. Scrape vanilla seeds out of bean and mix until batter is smooth. Divide evenly between 12 cupcake cases and bake for about 20 minutes.
