Blueberry Breakfast Strata

 Ingredients List

  • 6 eggs (slightly beaten)
  • 1/2 cups cottage cheese (4% milkfat)
  • 1 cup milk
  • 1 orange (or 1/4 cup)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoons salt
  • 10 1/2 stevia (full droppers liquid vanilla)
  • 6 cups whole grain bread (cubed hearty)
  • 15 ounces blueberries (frozen wild)


In a bowl whisk together the first 7 ingredients to combine.
Add bread and toss gently.
Pour in berries and gently combine well.
Place mixture into a 2-2.5 quart baking dish, cover and place in refrigerate for 2-12hours.
Preheat oven to 350 degrees.
Bake 40 minutes or until the top is golden brown.
Let stand 5 minutes before serving.
Top with yogurt if desired.
